Tagine, the name of both the vessel and the food that's cooked in it, is a mainstay of Moroccan cooking. This tagine, traditional in its look, is the development of a new glazed clay that is highly resistant to heat, allowing it to be used directly on a burner flame or electric hob. The cone-shaped lid allows rising vapors to cool and liquefy as they travel upward, returning the condensation to the dish, keeping its contents moist and succulent. | Having worked and resided in Morocco for a decade, I came to love the cuisine - one of the great cuisines of the world. Since returning to the USA, I have enjoyed using this cookware, which has performed perfectly every time. It is beautifully made and is a perfect stove-to-table serving medium. Be sure to season the tagine as directed prior to use - then use it for beef, lamb, chicken and vegetable tagines, or 'slow-cooked stews' to those unfamiliar with Moroccan or North African cooking. There is no true substitute for a tagine - and this one rocks. |
